New Breakfast / Chili Recipe

You want to know what's weird, for the last three weeks I have busy like a mo fo, and now that my life has resumed at a normal pace, I find that I've gotten lazy. Take, for example, last night. I could of easily gone to the gym and put in a cardio workout - but instead I sat on the couch and watched TV - like - seriously - what's up with that. I seriously need to give myself a much needed kick in the pants to get up and get moving! It's almost like I feel like "I deserve a break" from fitness after my 3-week long intensive course (during which I did make the time to workout) - again, here I am playing the victim card with myself. Oh internal struggles, when will I grow out of this!

So, that explains the no post from last night - I was too busy sitting on my fat arse watching the tube!

New day - new attitude - right?

So, lately, I've really taken to having these Greek yogurt / honey / granola parfaits from Starbucks for breakfast:

Yum, these are good - a little high in points (6 Weight Watcher points) - but they are tasty, they keep me full all morning and I can pick it up on the way to work. For me, thats a 3/3. Not something I would eat every morning, as they do have a lot of fat, but it's something I would classify as a special "treat" breakfast.

Now, what you've all been waiting for - the Chili recipe.

I have to admit, I don't make this myself, this is something my boyfriend makes for us all the time (you should know - I DON'T COOK)

So, I pleaded with him - telling him, "PLEASE MY READERS ARE ON A "NEED TO KNOW" BASIS HERE"

And this is what he told me:

1 can mexi-stewed tomatoes
1 can Heinz chili beans
1 package of old el paso chili seasoning
1 can of chick peas
A boat load of mushrooms (not necessary - but we LOVE mushrooms)
1 chopped red pepper
1 chopped green pepper
1/2 white onion
3 cloves garlic
Franks Hot Sauce (to taste - we like it HOT)
1 package of extra lean ground turkey meat

Brown the turkey in wok, then add the seasoning to cover the meat - then dump everything in there, let stew for about 2 and 1/2 hours on medium heat.

Then - add non-fat plain greek yogurt on top (of your individual bowl for serving) - oh yum - those of you who like Mexican out there will rejoice when you eat this! Plus - there's so much food here that we eat it for days. Cook once - eat three times!

Happy cooking all!

I like the greek yogurt from Starbucks, too. I'm also a fan of their perfect oatmeal!

  2. It cracks me up that all of your pictures are backwards... Are you taking them with a computer? If it's with a mac/photobooth, you know you can flip the image ("mirror")....
