Salad What?

Believe it or not, I am not a HUGE fan of salads, especially for lunch at work.

I am more of a chili or sammich girl. Namely because I need food with real substance and frankly, lettuce just doesn't cut it for me at lunch time. PLUS, I don't like leaving my lunch in the communial fridge at work because people steal and even nibble - gross!

BUT, today I took the plunge and I brought a chick pea/ corn/ red pepper/ cucumber / leek salad (which doesn't even need dressing it tastes so good au natural) that I MADE at home!



I had this salad for lunch yesterday and will have it again tomorrow - it's so tasty. I even made the corn from the cob - like I actually cut the corn off the cob (as opposed to canned). Fresh corn is sooo much better than canned or frozen corn.

I have to say - this salad inspiration came from Toni at Stackofpennies, she has posted pictures of the salads (like these) she makes for work lunches, and one day while reading her blog, I decided that I would do the same - thanks Toni!

Needless to say, i've been doing pretty good with nutrition/ diet lately! I want to be in those 160's peeps, I want it real bad!

    I'm not a huge fan of salads as meals either, I think I'm a volume eater lol and salad just doesn't always cut it for me.

    Mmmm those strawbs look good!
